A quick & easy recipe great
for a snack or after dinner treat

Honey & Peanut Butter Muffins

Ingredients

Makes 6 muffins

  • 1 cup flour
  • pinch of salt
  • 1 1/2 teaspoons baking powder
  • 3 tablespoons peanut butter (however you prefer crunchy or smooth)
  • 2 tablespoons oil
  • 3 tablespoons honey 
  • 3/4 cup milk (dairy or non dairy)

How to make your Muffins

01 

Preheat the oven to 200C/400F/Gas 6.

Line a 6 muffin pan with muffin cases, and set aside.

In a bowl, whisk together the flour, baking powder, and salt.

Add the peanut butter and oil and mix with a fork until it resembles breadcrumbs.


Add the milk and honey in thirds and fold in until just combined - do not overmix.

03 

Pour into muffin tins (about 3/4 full) and bake for 10-12 minutes, until tops are golden brown and spring back when you touch them.
